Why It Lasts

2.5mm thick copper body — the thickest copper cookware in wide commercial production — with a tin-lined or stainless steel interior. Copper conducts heat 30 times better than stainless steel, which means incredibly fast and responsive temperature changes. The brass handles are cast (not stamped) and brazed to the pan body. Mauviel has made copper cookware in Villedieu-les-Poêles, Normandy since 1830 — the town has been the copper cookware capital of France for 700 years. These pans are bought once and passed down; professional French kitchens use Mauviel for sauces.

Known Weaknesses

Tin-lined versions require re-tinning every 10-20 years as the lining wears through — a specialized service costing $60-100 per pan. Copper reacts with acidic foods and is toxic if exposed through worn tin lining — not a safety concern with new pans but requires attention as they age. The exterior develops verdigris (green oxidation) in humid environments without regular polishing. Heavy. Prices start around $200 for small saucepans and climb steeply.

  • High performance. Mauviel's M'Heritage collection is made of two traditional cooking materials: copper and stainless steel, (90-percent copper and 10-percent 18/10 stainless steel). Copper exterior offers superior control, heats evenly and much faster than other metals; stainless steel interior preserves the taste and nutritional qualities of foods and is easy to clean.   • Cast Iron Handles. Are traditional and substantial. Offer a very comfortable grip and good balance. Straight rim. Stainless steel rivets
  • Versatile: can be used on all cooking surfaces. Gas, electric, halogen stovetops, and in the oven. It can also be used on induction stovetops with Mauviel induction stove top interface disc (sold separately)
  • Care. Do not use high heat for a long period of time. Do not leave empty pan on a heated burner for an extended period of time. For items that are not dishwasher safe, Do not use in dishwasher. Do not use metal utensils on the non-stick cooking surface. The use of scouring pads, steel wool, abrasive cleansers, bleach and/or oven cleaners is not recommended and can scratch or damage your cookware. Misuse of your cookware will void your warranty. Bleach will erode the Stainless Steel interior.
