Why It Lasts

Spun from 2.5-3mm thick iron-rich carbon steel (99% iron, 1% carbon) with no coatings, liners, or bonded surfaces — there is literally nothing to fail except the metal itself. The beeswax coating factory-applied protects the steel until first seasoning, after which the polymerized oil layer builds with each use and becomes the cooking surface. Made in the Vosges mountains of France since 1830. The poured iron handle is welded, not riveted, and rated for unlimited oven temperatures. Carbon steel pans from the 1950s are still being seasoned and cooked on.

Known Weaknesses

Reactive with acidic foods (tomatoes, wine, citrus) until a deep seasoning is established — typically 6-12 months of regular use. Rust forms immediately if left wet — must be dried and lightly oiled after every wash. The cooking surface is not inherently non-stick and has a significant learning curve. Heavier than stainless steel but lighter than cast iron of the same size. Not for induction cooktops unless specifically labeled (the Mineral B Pro series is induction-compatible).
